I am just curious because I read in the health column about propyl lysine, an antioxidant found in the bread crust formed by a reaction of amino acid lysine and starch and reducing sugar. So where did the amino acid come from? Is this a special type of bread? Thanks for any help you can give.

Where Can I Get Wheat Seeds For Eventually Making Bread?

I want to make some really good natural bread from scratch and I know I need some flour with a high gluten content. I want to grow the wheat, process it, turn it into flour and make some bread. BUT, I can’t find anywhere where wheat seeds that will make flour with a high gluten content. And I only want a small amount.

This is the recipe I want to make but it doesnt tell u what to do if u dont have a bread machine
INGREDIENTS
1 cup warm milk (110 degrees F/45 degrees C)
2 eggs, room temperature
1/3 cup margarine, melted
4 1/2 cups bread flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast
1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened
1 (3 ounce) package cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners’ sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt
DIRECTIONS
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
Roll dough into a 16×21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixt

Bread has so many calories, but I am so interested and I absolutley LOVE baking it. The flour is the main thing, i’ve already found i could use fat-free milk, splenda no calorie sugar, cooking spray, but do you have any other tips on how to make pastries with lower calories? What Is A Substitute For Eggs When Making Bread?

I don’t want to use that egg replacer stuff either. So is there somethings in my cupboard that I can put together to substitute what eggs do when making a loaf of bread in a bread machine.
… I can’t use eggs because I am still breastfeeding my daughter and she is allergic to eggs. I know the replacer would not be an allergen, I just don’t want to use it.

Question About Making Bread?

I’ve made about a dozen loaves of bread with my bread machine from various recipes from the cookbook that came with the machine and the internet. I usually just make the dough in the machine and then bake it in the oven. But I noticed all my bread comes out kinda dense without a crisp, flaky crust. How do I get a nice airy, fluffy bread and a flaky crisp crust?
